The last time I went on a low-carb diet, I wanted to gnaw my fingers off.

No, seriously: My simple mind interpreted “low-carb diet” as “Delete all the joy from your diet and pretend to enjoy dry chicken and celery for the rest of your life.” It was torture. I found myself eating pieces of unseasoned chicken with one hand and using the other to Google photos of bacon macaroni and cheese—and I’m not even one of those Cheese People! It’s just that anything sounded better than the sad version of the Paleo diet I was subjecting myself to.

I was eating my 19th celery stick when I thought, Am I in hell? Once I realized I was alive and kicking, I determined to find better choices other than my grilled-chicken and dry-veggie aesthetic. I couldn’t live like that anymore.
